Auch in Travemünde gibt es Neuigkeiten, über die wir berichten möchten: Die ATLANTIC Dependance erweitert das Hotelangebot um zehn moderne Appartements in direkter Nachbarschaft zum ATLANTIC Grand Hotel. The ATLANTIC Hotels family has a very special anniversary to celebrate this year: the ATLANTIC Hotel Universum Bremen is turning 25! Opened as the third member of the hotel group in June of the Expo 2000 year, the four-star hotel embodies the motto “Innovation and Tradition” in a truly unique manner. The hotel, developed by the renowned Bremen-based designer Detlef Rahe, received prestigious international recognition with the Contract World Award 2001 and a Red Dot Award for Communication Design for its innovative signage system, plus its comprehensive sustainability concept has also been certified by the GreenSign Institut. The colour concept based on the four classical elements has been employed throughout the hotel from the beginning and naturally updated and refined to reflect the latest trends. The anniversary celebrations got under way recently with a splendid party including a multi-tiered cake: The team at Severin*s Resort & Spa has been welcoming guests with the philosophy “Arrive, take a deep breath and feel good” since 1 st December 2014. 06 CHEF’S DARLING törn 24/25 I ATLANTIC-HOTELS.DE Kürbis-Crème Brûlée Schokoladenküchlein STROM, ATLANTIC HOTEL SAIL CITY ZWEIERLEI ZUM DESSERT DESSERT DUO – MINI CHOCOLATE CAKE & PUMPKIN CRÈME BRÛLÉE ZUTATEN Schokoladenküchlein Zutaten für 10-15 Küchlein, je nach Größe der Backformen 250 g dunkle Kuvertüre 250 g Butter 250 g Vollei oder 5 ganze Eier Größe M 100 g Eigelb (von weiteren 5 Eiern Größe M) 125 g Zucker 75 g Mehl 1 EL Backpulver Salz Backförmchen Kürbis-Crème Brûlée Zutaten für 9 Portionen à 0,15 l, je nach Größe der Auflaufformen 500 g gedünsteter Hokkaido-Kürbis 8 Eigelb 300 g Sahne 200 g Milch 240 g Zucker (Rohrzucker) Muskat, Zimt, Kardamom Salz kleine Auflaufförmchen ZUBEREITUNG Schokoladenküchlein: Kuvertüre und Butter über einem Wasserbad schmelzen, zur Seite stellen. Vollei (bzw. 5 ganze Eier), 5 Eigelbe und Zucker kalt aufschlagen, geschmolzene Kuvertüre und Butter unter die Mischung rühren. Eine Prise Salz dazugeben, Mehl und Backpulver unterheben. Die Förmchen zu 2/3 füllen, Küchlein im Backofen bei 180 °C ca. 8 Minuten (Umluft – Zeit und Einstellung können je nach Ofen variieren) backen. Küchlein auf Dessertteller stürzen und z. B. mit einer Kugel Vanilleeis servieren. Kürbis-Crème Brûlée: Den Kürbis dünsten, pürieren und passieren, zur Seite stellen. Eigelb, Zucker, Sahne und Milch mischen und das Kürbispüree dazugeben. Mit den Gewürzen abschmecken, abfüllen und für 90 Minuten bei 95 °C (Umluft – Zeit und Einstellung können je nach Ofen variieren) im Ofen backen. Abschließend mit etwas Rohrzucker bestreuen und mit Hilfe eines Gas-/ Flambierbrenners karamellisieren lassen. INGREDIENTS Mini chocolate cake Ingredients for 10–15 cakes, depending on mould size 250 g dark couverture chocolate 250 g butter 250 g whole egg or 5 whole medium eggs 100 g yolks (from a further 5 medium eggs) 125 g sugar 75 g flour 1 tbsp. baking powder Salt Small moulds Pumpkin crème brûlée Ingredients for 9 x 0.15 l portions, depending on mould size 500 g boiled red kuri squash 8 yolks 300 g cream 200 g milk 240 g (cane) sugar Nutmeg, cinnamon, cardamom Salt Small moulds PREPARATION Mini chocolate cakes: Melt the couverture chocolate and butter together over a bain-marie and put to one side. Beat the whole egg (or 5 whole eggs) and 5 yolks together with the sugar without heating and stir into the melted chocolate and butter mixture. Add a pinch of salt and fold in the flour and baking powder. Fill the moulds full and bake at 180°C for approx. 8 minutes (fan oven – time and temperature may vary depending on model). Tip the cakes out onto dessert plates and serve with a scoop of vanilla ice cream, for example. Pumpkin crème brûlée: Boil, purée and sieve the pumpkin before setting to one side. Mix together the yolks, sugar, cream and milk, then add to the pumpkin purée. Season with the spices, pour into the moulds and bake at 95°C for 90 minutes (fan oven – time and temperature may vary depending on model). To finish, sprinkle with cane sugar and caramelise the crust using a blowtorch.

Besonders hervorzuheben ist der erste Platz in der Kategorie „Luxury Spa & Health Resorts“, der das exzellente Well- ness- und Erholungskonzept des Hauses würdigt.
