yes, of course, i always like to gather inspiration when travelling. but that doesn’t mean i’m just copying dishes. at alto, we attach great importance to seasonal ingredients from the region. we cook with what’s available and per- fect the dishes with new, creative ideas. is that more difficult in autumn and winter than in summer? not at all. the classic winter vegeta- bles such as pumpkins, cabbages and root vegetables leave plenty of room for creativity. just think of our traditional st. martin’s day goose menu. or our duck dishes, which we are even offering in different variations this year: as a hearty german version with red cabbage, dumplings and red wine sauce or an asian version with curry. so it’s all just a question of freshness and spices? absolutely. life is made up of fresh, high-quality food and good spices. and so is our menu. what are your personal highlights? i love seafood. our menu features deli- cious oysters in all months with an “r”. we also put a lot of love into the lobster thermidor. this is a french speciality with a creamy mixture of boiled lobster meat, egg and brandy. it is stuffed into the lobster shell and baked in the oven until golden brown with a rich cheese crust. that sounds fantastic. do you have any other recommendations for our readers? simply come along and enjoy! from 12.00 p.m. to 3.00 p.m. and in the evening until 10.00 p.m. nach einem langen und heißen sommer dürfen wir uns mal wieder so richtig auf die kältere jahreszeit freuen. daniel otto, chefkoch im restaurant alto, sagt, warum. herr otto, sie kommen gerade aus dem urlaub. haben sie ihren gästen was mitgebracht? ja, sicher, auf reisen lasse ich mich immer gerne inspirieren. aber das heißt nicht, dass ich einfach was nach- koche. im alto legen wir größten wert auf saisonale zutaten aus der region. wir kochen mit dem, was es gibt, und verfeinern die gerichte mit neuen kreativen ideen. ist das im herbst und winter schwie- riger als im sommer? überhaupt nicht. das klassische wintergemüse aus kürbis, kohl und knolle lässt der kreativität genügend freiraum. denken sie nur an unser traditionelles martinsgans-menü. oder an unsere entengerichte, die wir in diesem jahr sogar in verschiede- nen varianten anbieten: mal deftig- deutsch mit rotkohl, klößen und rot- weinsauce, mal asiatisch mit curry. also ist alles nur eine frage der frische und gewürze? absolut. frische hochwertige lebens- mittel und gute gewürze machen das leben aus. und unsere speisekarte. was sind ihre persönlichen highlights? ich liebe meeresfrüchte. in allen mo- naten mit „r“ stehen leckere austern auf unserer karte. daneben stecken wir viel liebe in den hummer thermi- dor. das ist eine französische spezia- lität mit einer cremigen mischung aus gekochtem hummerfleisch, ei und brandy. sie wird in die hummerschale gefüllt und im ofen goldbraun mit ei- ner kräftigen käsekruste überbacken. das klingt fantastisch. haben sie sonst noch eine empfehlung für unsere leser?
