Buffalo meat raised in Bremerhaven
“Our very special project: we offer meat from water buffalos that have been bred in Bremerhaven.”
On Bremerhaven’s Luneplate, an area of former farmland which is now an ecological habitat for flora and fauna, buffaloes of 100 percent ecological quality are being kept under the management of bremenports. When fully grown, these majestic animals hit the scales at 600 kilograms. For the Gourmet Safari event, we served a buffalo menu in our Captain’s Lounge function room that met with an enthusiastic reception from our guests.
Buffalo meat has a similar taste to beef, but has a firmer structure and is extremely versatile: the guests sampled this exotic regional specialty sautéd as filet, roast beef and entrecôte. Together with the butchery Mühlenbeck, our chefs created small frying sausages of buffalo meat for our à la carte line in the STROM restaurant.
With this project, the ATLANTIC Hotel SAIL City is enhancing its regional profile – yet another element in the company’s course of sustainability.
